The present invention relates to a method of encapsulating a vegetable oil emulsion comprising the steps of extracting vegetable oil from the plurality of seeds; homogenizing the vegetable oil in an aqueous solution comprising at least one wall material for encapsulating the oil emulsion; freeze-drying the homogeneous mixture for partial drying of the encapsulated vegetable oil emulsion; and microwave heating the emulsified oil to form a plurality of dried solid slab of the encapsulated vegetable oil emulsion.
